My Cooking Secrets

Hi All –

My Cooking SecretsI just finished making a dessert for a BBQ my man and I are going to later. So what you say? The fact of the matter, I am no gourmet cook. Recipes and I are actually mortal enemies. Anything more than 4-5 ingredients and basic cooking utensils, I pass. Recently, my best  friend who can count on me for anything, asked me to be the guest chef at the mentoring Apples of Gold dinner. Confidence flagging,  I had to say no. I do know my limits. So this begs the question, what do you feed the fam? Fast food? Not often. Processed meals? Only if we are craving high calories, low nutritional cardboard tasting food – so no. What then, what?

Here is my secret – I do basic, simple Mama Juju meals. A dinner might consist of baked chicken, garlic couscous, and sliced fruit salad. Chicken prepared with salt, pepper, garlic salt and fruit salad is whatever fruit in my fruit bin chopped and mixed together, no additives. I do use frozen veggies if fresh isn’t available. Even fresh is usually raw and with a bit of ranch for kids to dip.

Or any easy favorite stir-fry would be turkey polish kelbasa, sliced red and yellow peppers, garlic and bit of soy sauce. Served over a bed of rice. Popular hit here at H house!

Fancy for me is Chicken Cacciatore. Dip chicken pieces into flour, pepper, salt and bake for half hour. Add cooked spaghetti and top with diced whole tomatoes mixed with salt, pepper, oregano. And bake for another half hour. Lettuce wedges and broiled garlic bread and ‘Dinner’s served’!

My out at potlucks, either Kraft Mac N’ Cheese or a big bowl of chocolate pudding. Cause my kids complain there is never any kid food.

Embarrassed? Not at all! My family is happy (though this may have lent itself to issues with food touching each other – oops – though 3 of my kiddos have sensory processing disorder) and well fed. Plus my man is a gourmet cook. Baked Alaska and Skin stuffed turkeys have graced our dining room table!

Oh yeah, bet you are wondering just what I whipped up for said BBQ dessert! Layered cubed angel food cake, sliced strawberries, fresh blueberries and Cool Whip. All in a clear bowl for full effect. Ain’t I fancy?!

  1. Preparing food for the family is not an easy job especially if we are not a good cook. We need to be creative and do some recipe research most of the time.
